Last weekend it was Easter and I baked the frosted white chocolate cake that is one of my favourites to make. The recipe is by British chef James Martin and is a Madeira style cake with white chocolate in the sponge and cream cheese frosting. I made it on Saturday and then iced it on Easter Sunday (12th April). Some years I do it all on the Saturday, just depends. Here's a picture:
It tasted nice, though it never comes out quite the same year to year! I think I mixed the frosting better than last time, lol. I put Cadbuy's Mini Eggs on top, like I do for Oestara recipes. It's best kept in the fridge, but you can also wrap it in clingfilm and freeze it.

Easter was fine, although there was no turkey for a family meal this year (none in the shops probably due to the current situation with the coronavirus and food shortages), so had chicken instead. My chocolate eggs this Easter were Terry's Chocolate Orange, Bournville and a smaller Cadbury egg! I didn't have a go at egg dyeing this year because eggs have been hard to get and also I just couldn't be bothered, lol. I've tried it in the past with mixed results, most recently last Easter. I did actually see some white eggs at the Co-op (which are probably besr for natural egg dyeing) but they were quite expensive. Maybe I'll try again next year!
Hope you had a good Easter or a good Passover, depending on what you celebrate. :) Things are quite weird at the moment with the coronavirus and lockdown. Last year it was really hot for the time of year and I had a walk on the beach on Easter Monday. That definitely didn't happen this year, but we have had some nice weather and I went for a quick walk in my neighbourhood today. The other week it was 23C (about 73F) in my area but recently it's been around 9-11C (48-52F). It was warmer today though, 17C (about 62F).
