While I'm no longer writing more in-depth posts with ideas for celebrating the sabbats, I am occasionally doing new posts with ideas if I feel inspired to. I enjoyed writing the Beltane and Litha posts last year (which also included some ideas for celebrating), so I thought this year I would share some more salads to make during mid-late spring.
Also, Beltane is coming up this week, it's on Thursday 1st May, or Wednesday 30th April, depending on when you celebrate (it traditionally goes from sundown to sundown). So I've included a few links with some more info and inspiration. :)

I most often make guacamole or kachumbari (Kenyan/East African tomato and onion salad) for Beltane. I usually make a tomato and onion salad for Litha as well. I like to have my salad with some other foods like chicken, crisps (chips), dips etc., I also usually have some kind of sparkling drink, like elderflower or lemonade.

Last summer I made a Cameroonian salad (another Precious Core recipe). I didn't like it as much as her other salads because I found the salad cream dressing a bit rich. If I make it again I'd probably make less of that. (And of course I could do it without the dressing or make another one.) I also made a smashed potato salad recipe during last summer and autumn. It's nice and I'm planning to make it again this week, actually. (Not for Beltane but just for my tea/dinner.) It's a vegan recipe but you can also make it if you're not vegan (like me!).
