Winter-Spring Update (2025) + Easter Baking

We've just passed the first quarter of the year, so it's time for my first update of 2025! Also, since Easter is coming up next weekend, I've added a section with some Easter recipes (scroll down for that). :)


Winter-Spring Update (2025)

For the past few years I've written quarterly updates (from "season to season"). I started out writing monthly updates in 2019 and then "two monthly" (two months at a time) ones in 2020, but found that quarterly was better for me. So I'm going to carry that on in 2025. :)

I didn't do much during January really. I had a bit of a stressful start to the year, due to personal circumstances. 

At the beginning of February I celebrated Imbolg. You can see my post about it here: https://livingseasonal.blogspot.com/2025/02/imbolg-2025.html

Also during February, I went to Popeyes and got some food. Similarly to Slim Chickens, I'd had milkshakes from there before but not a meal. I tried Slim Chickens' food for the first time in December. I like them both, but like Popeyes' chicken a bit more and  prefer Slim Chickens' milkshakes! 

At the beginning of March I celebrated my birthday. I got a few presents and had a red velvet cake from Marks & Spencer (a small one because they didn't have the bigger one I usually get) and some food at home. I also got takeaway from Nando's

Later in March I met up with my dance friends at a pub in Hangleton (Hove). It was nice to see them.

While I'm not currently going on regular park walks , I went to the park a few times during February and March. I had planned to go to Hove Park for Oestara but ended up going to a nearer one instead, because it was quite a busy day. However, I went to Hove a couple of weeks later, around sunset. I also went to Burger King and got a double bacon cheeseburger, a mocha latte and a Coke, then went and sat in the park for a bit.

Oestara 2025

Last Thursday (20th March) it was Oestara, (more commonly known as Ostara), aka the Spring Equinox. My main celebration for this sabbat is baking and this year I made carrot cake bars with vanilla cream cheese frosting. Oestara 2024

Last Wednesday (20th March) it was Oestara (more commonly known as Ostara)/the Spring Equinox. (Or Tuesday the 19th depending on your time zone.) I normally bake for this sabbat and this year I made some carrot cake cupcakes. I used this recipe from Love Lemons: https://www.loveandlemons.com/carrot-cake-cupcakes/

They have cream cheese icing/frosting and are similar to the spicy carrot cake cupcakes I made last Oestara. You can also make a carrot cake version of these (big cake). They were quite nice. I didn't use any nutmeg because I didn't have any. I was going to use mixed spice instead but realised it was out of date! lol.

The cream cheese icing was nice and I put Cadbury Mini Eggs on top to fit the Oestara/spring theme. Here's a pic:

This year I thought I would share a few links with inspiration for spring. And also for  the spring festivals Oestara aka Ostara/the Spring Equinox and Easter. Oestara is on Wednesday 20th March this year, or tomorrow (Tuesday 19th March), depending on your time zone. Easter is 31st March.

I called the post Easing into Spring because the start of seasons are transitional times. Sometimes you might feel like going full steam ahead into the next season, and other times you might want to go slower. Often at this time of year the weather is still colder and winter lingers. 

As I mentioned in my Imbolg 2024 post, we had snow in the UK in January. Some parts of the country have had some more recently but we haven't had any more in Sussex, just a lot of rain. At the moment it's been warmer, about 14C (56F) during the day and 9C (48F) at night. There's meant to be colder weather again and more snow in some places next week though.

Oestara 2023

Last Monday (20th March) it was Oestara (more commonly called Ostara) aka the Spring Equinox. As I said in my Celebrating Oestara! post, I usually bake for this sabbat (or "no-bake" sometimes!). This year I made spicy carrot cake cupcakes using this recipe from Natalie Mason: https://natalie-mason.com/spicy-carrot-cake-cupcakes/

They have a cream cheese icing. You can make a big cake or cupcakes, and I decided to go with the cupcakes. They were quite nice. I've made carrot, zucchini and apple muffins before (Don't Waste the Crumbs recipe) and they didn't come out that well, but the carrot blended in nicely with these cakes. I've also made chocolate zucchini (courgette) cupcakes several times and really like those.

I'd planned to put Cadbury Mini Eggs on the top to fit the spring theme, but they were sold out in the supermarket, so I got Smarties Mini Eggs instead. Here's a pic:

Celebrating Oestara!


It's almost time for Oestara (more commonly known as Ostara) aka the Spring Equinox! This year it's on Monday 20th March.

For the past few years, I've written posts sharing celebration ideas for the sabbats and last year I did a post rounding them up. During 2022 I also started writing a series of posts sharing some ideas and inspiration for celebrating and links to other sites, rather than in-depth posts and have continued that into 2023. As I said in my Yule 2022 one, I feel that I've pretty much covered them all now, since each festival has several posts. 

This Oestara post completes my current round of sabbat ones (which I started last Beltane), so going forward I will probably just write about my celebrations and maybe write short posts before the sabbats. I do appreciate everyone who has read them and plan to continue blogging about seasonal festivals here. I just don't want to keep rehashing the same thing. :) (As with my most recent Madron post, I've previously written a post called Happy Oestara!, so that's why this title is a bit different.)

Oestara (often spelt as "Ostara" but I first heard about it with the alternative spelling) is the 2nd of 3 spring festivals on the Wheel of the Year, coming after Imbolg/Imbolc (which marks the transition from winter to spring) at the start of February and before Beltane (mid-spring) in late April/early May. It's also the Spring Equinox, which is often seen as the "official" start of spring

The Spring Equinox is an astrological event where day and night are fairly equal, due to the position of the Earth moving around the sun. It's the opposite to the Autumn Equinox (also known as Madron/Mabon) in September. After this time the days will continue to get longer until the Summer Solstice (known as Litha to some pagans). I wrote a bit about it in my 2019 Oestara Celebration Ideas post.

Oestara 2022

Last Sunday (20th March) it was Oestara (more commonly known as Ostara) aka the Spring Equinox. As I said in my Oestara Round-up post, I normally bake for this sabbat. This year I made a Maltesers traybake slice (which is actually "no-bake!), using this recipe: https://www.goodto.com/recipes/maltesers-bites

It's very similar to Birdies Perch Malteser slice (my favourite thing to "no-bake"),  except that has digestive biscuits instead of Rice Krispies. I've made a recipe based on that for Oestara in 2016 and the usual recipe last year.

I used Rice Snaps (Tesco own brand) for the traybake bites and put Cadbury Mini Eggs on top along with the Maltesers, to fit the spring theme! They tasted quite nice. Here's a picture:

For the past few years, I've written celebration posts for Oestara. Last year I started a series of round-up posts for each sabbat and am continuing that into 2022, so here is Oestara's! :)

Oestara (more often spelt as "Ostara" but I first came across it with the "e" added) is the 2nd spring festival on the Wheel of the Year and celebrates the "official" shift into spring. The name is thought to have come from the Goddess Eostre, so it's not surprising that this sabbat also has links to the Christian festival Easter!

Oestara comes after Imbolc/Imbolg at the beginning of February (which marks the start of the transition from winter to spring) and before Beltane at the end of April/start of May (when we start to shift from spring to summer).

Oestara 2021

Last Saturday it was Oestara, (more commonly known as Ostara) aka the Spring Equinox.  As I mentioned in the Happy Oestara! post, my main celebration was baking. This year I actually did some "no-baking, since I made a Birdies Perch Malteser slice, which is one of my favourite things to make. The recipe is from Sam Stern. I last made it for Oestara in 2016. That year I made it a bit differently, but this Oestara I stuck to my usual recipe. I put Cadbury Mini Eggs on top to fit the theme! Here's a picture:

Happy Oestara!



Oestara (more commonly known as Ostara), aka the Spring Equinox is almost here. This year it's on Saturday 20th March (tomorrow!). I normally post on Sundays or Mondays but wasn't able to get this finished earlier, so I'm posting today instead. :)

Oestara 2020

On Friday it was Oestara (more commonly known as Ostara) aka the Spring Equinox. (At least in the UK, as I mentioned in the Oestara + Spring Celebration post, by US time it was Thursday). I celebrated by baking, which I usually do for Oestara and Easter too! Well, this year I made a white chocolate tiffin, so it was technically "no bake", lol. I hadn't made tiffin before but I had a look for a recipe a few months ago because a cafe at my local park makes really nice ones! This recipe uses cherries but I left them out because I'm not that into cherries. It has coconut in though. I put Cadbury's Mini Eggs on top, like I normally do for Oestara, to fit the theme of spring and fertility/new beginnings. Here's a pic:

Oestara 2019

Last Wednesday it was Oestara (also known as Ostara and the Spring Equinox). I celebrated by making a Malteser slice with Cadbury Mini Eggs on top! (I usually celebrate with food and drink). As I mentioned in my Oestara Celebration Inspiration post, it's similar to Birdies Perch, which is a favourite of mine to make.

I first made it last year; it was called Malteser Fridge Squares and the recipe was on the Red Nose Day site. Preparing for Spring + Spring Inspiration

 

I'm looking forward to spring! While this winter hasn't seemed as long as last year's (at least not in Sussex, since it hasn't been as cold and we didn't get much snow), I'm not a big fan of this season. I'm more of a summer person! The past few weeks the weather has been a bit weird- it was the warmest February on record on one day (up to about 16C (about 60F) in my area), then it returned to more typical temperatures and now we have Storm Freya. Today it's 8C (47F). The atmosphere feels "lighter" to me now. Since I get more depressed during the winter, I tend to feel better when the weather shifts and spring gets nearer.

As I've mentioned in last year's spring post, there are two starts to spring- meteorological and astronomical. The first one is 1st March and the 2nd is 20th March, the same day as the Spring Equinox (also called Oestara/Ostara). Oestara 2018

Last Tuesday was Oestara aka Ostara and the Spring Equinox. As I mentioned in my Celebrating Oestara and Spring post I baked a white chocolate Malteser cake. Here's the recipe: https://goodfood.uktv.co.uk/recipe/white-chocolate-malteser-cake/

Update 13/3/22: The Good Food site is now gone but here is a recipe that I think is quite similar, (although it has malted milk powder, not drinking chocolate and the one I made didn't have any rum in!): https://www.deliciousmagazine.co.uk/recipes/chocolate-and-malteser-cake/

I couldn't find white Maltesers so I just used ordinary ones for the top of the cake. I put Cadbury Mini Eggs on top as well. The recipe requires Malteser drinking chocolate, so I put in two 50g sachets and I used Tesco white chocolate for the icing. It came out quite nice. Here's a picture:

Celebrating Oestara + Spring

Now it's almost officially here, Tuesday 20th March is the Spring Equinox, the first day of spring. It's also Oestara (or Ostara), so I thought I'd do a post on celebrating both Oestara and spring in general. :)

Ironically we're having wintry weather again, like when I wrote my post about getting ready for spring! We're having what they're calling the "Mini beast from the East" in the UK. It's around 0 degrees Celsius (32F) here in Sussex and is snowing as I write this. But hopefully spring isn't too far away!

Oestara 2017

I normally post on Sundays or Mondays but I had computer problems recently, so I'm posting today instead. :)

Last Monday was Oestara aka the Spring Equinox. I celebrated by making sugar cookie bars. As I mentioned in my Oestara/Spring Equinox Celebration Ideas post I first made them in 2015 and while I liked them, I think they could have come out better. This time I used a different recipe from Sally's Baking Addiction (I pinned to it my Recipes To Make board on Pinterest a while ago). I did like them but I was a bit disappointed again. They seem to come out more like cake but maybe they are meant to be thicker. Never mind!


I'd originally intended to dye all the buttercream, but I was in a bit of a rush that day because I had a belly dance workshop and I ended up forgetting to put the food colouring in! lol. So I used some plain buttercream and then put the colouring in when I got back. I used green and yellow for spring colours. I also put Cadbury Mini Eggs on top. Here's a picture from before I put the Mini Eggs on (I forgot about them too at first!):

I've done No 3 on Tess Whitehurst's list (Bless chocolate eggs). I used one of the mini chocolate eggs I got from Marks & Spencer recently. This time of year is great if you like chocolate because of all the Easter choc in the shops! I've been really into Cadbury solid chocolate mini eggs lately, lol.

I usually celebrate the sabbats by making some food and/or drink and this year I've decided to make sugar cookie bars for Oestara and put Mini Eggs on top. I first made them two years ago and they didn't come out so well. At the time I'd never made them before, so had no idea how they were supposed to be. I think mine came out too thick but I still liked them. Now I have an idea what they should be like and also I'm using a different recipe. I'll do a post next week about it. :)

Oestara 2016

On Sunday (20th March) it was Oestara/the Spring Equinox. I like to celebrate the sabbats by making some food and/or drinks and in previous years I baked fairy cakes (click on the Oestara link to see them) and sugar cookie bars. My oven is broken at the moment though, so I had a look for a No-bake recipe). In the end I decided to go for Birdies Perch Malteser slice which is a favourite of mine. I wanted to make the Malteser slice a bit different so I used some new McVities Digestive Nibbles as well as Maltesers. It came out quite nice. Here's a pic:
